Artichoke Brushetta Recipe

  • 6 1/2 ounces artichoke hearts - drained and chopped
  • 1/2 cup Romano cheese - fresh and grated
  • 1/3 cup red onion - finely chopped
  • 1/4 cup mayonnaise
  • 1 tomato - finely chopped
  • 1 shrimp - small bag of salad sized shrimp, cooked
  • 1 cup Monterey Jack cheese - shredded
  • 1 baguette - cut into 1/3-inch slices

  • Preheat broiler.
  • In a medium bowl mix artichoke hearts, Romano cheese, red onion, shrimp, mayonnaise, and tomatoes.
  • Arrange bread on a cookie sheet.
  • Cover the bread with mixture and then sprinkle with cheese.
  • Broil 3-5 minutes until toppings are bubbly and lightly browned.
