Ingredients
  • 2 eggs
  • 1 cup pumpkin
  • 1/2 cup vegetable oil
  • 2 1/2 cups flour
  • 2 cups sugar, granulated
  • 1 tablespoon pumpkin pie mix
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 cups apples - peeled, cored, diced
  • For streusel:
  • 2 tablespoons flour
  • 1/4 cup sugar, granulated
  • 1/2 teaspoon cinnamon
  • 4 teaspoons butter

  • Preheat oven to 350 degrees. Line muffin cups with paper liners or grease the cups.
  • In a large bowl, combine eggs, pumpkin and oil. In a separate bowl, sift together flour, sugar, pumpkin pie spice, soda and salt. Add flour mixture to pumpkin mixture and stir to moisten. Fold in apples. Spoon into muffin cups.
  • For streusel topping, combine flour, sugar and cinnamon. Cut in butter until mixture becomes coarse crumbs. Sprinkle topping over muffin batter.
  • Bake for 35-40 minutes.
