Pina Colada Salad Recipe

Ingredients
  • 3 cups cooked rice - white, chilled
  • 1 1/2 cups crushed pineapple
  • 2/3 cup sugar
  • 1/4 cup lemon juice
  • 1/8 teaspoon salt
  • 8 ounces whipped topping
  • 1 1/2 cups shredded coconut

  • Cook the rice ahead of time so that it has enough time to chill before adding it to the other ingredients.
  • Drain the pineapple well and then add the sugar, lemon juice and salt to it. Stir to combine.
  • Fold in the whipped topping.
  • Add the chilled rice and coconut; gently fold into the other ingredients.
  • Place in the refrigerator until completely chilled.
The combination of pineapple and coconut make this a delicious salad. A great salad for Mother's day or Easter.

"I have to say I didn't have the best results with this salad.. it looks SOOO good, but when I made it, it didn't taste as good as I thought it would. I'll have to try it again just incase though. :]"
