Butterscotch Icebox Cookies Recipe

Ingredients
  • 1 cup butter
  • 2 cups packed dark brown sugar
  • 2 Eggs
  • 3 1/2 cups flour
  • 1/2 teaspoon salt
  • 1 tablespoon baking soda
  • 1 tablespoon vanilla
  • 1 cup chopped pecans
Directions
Cream butter, add sugar and cream well. Beat in eggs. Sift the dry ingredients and add to creamed mixture. Add vanilla and nuts. Shape into rolls and wrap in wax paper and put in refrigerator at least 4 hours or longer, until firm. Slice and place about an inch apart on greased cookie sheet. Bake at 400° for 12 min. Remove from cookie sheet at once and let cool. Store in covered container and they will stay crisp.
