Oatmeal Cookies (made with apple juice) Recipe

Ingredients
  • 1 very ripe banana (mashed)
  • 1 egg white or 1/4 cup Egg Beaters
  • 3/4 teaspoon vanilla extract
  • 3/4 cup frozen unsweetened apple juice concentrate (thawed but not diluted)
  • 2 tablespoons unsalted butter (softened)
  • 2 cups quick-cook oatmeal (uncooked)
  • 1 cup flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • pinch of salt
  • 1 cup dried fruits, such as raisins, cherries, apricots, prunes, dates, cranberries
  • 1 teaspoon cinnamon
  • 1/2 cup pecans (chopped)
Directions
NOTE: Suitable for diabetics.

Preheat oven to 350°. Mash banana in a large bowl, add the egg white, vanilla extract, butter and dried fruits. Let stand 5 minutes to soften the fruits. Add remaining ingredients. Mix until oats are blended in good. Drop by tablespoonful onto a cookie sheet which has been sprayed with Pam. Bake for 10 minutes. Remove from oven, let sit 1 minute, then remove to a wire rack to cool. Store in an air tight container. Makes 3 dozen cookies. Freezes well. Enjoy!
