Pizzelles Recipe

A light and thin waffle cookie. Traditionally flavored with anise, any extract flavoring can be used according to your preference. It'll be hard to keep this around for the holidays unless you hide them!

Ingredients
  • 1/4 cup vegetable oil
  • 1/4 cup butter
  • 1/4 cup vegetable shortening
  • 1 1/2 cups sugar
  • 6 eggs
  • 2 teaspoons baking powder
  • 2 1/2 cups all purpose flour
  • 1/4 teaspoon salt
  • 1/4 teaspoon extract of choice: anise, lemon, vanilla, almond

Cream together the vegetable oil, butter, shortening and sugar until mixed well.

Add eggs and mix until incorporated.

In separate bowl, mix together dry ingredients and add to wet mixture. Do not over mix.

Stir in flavoring.

Drop batter by teaspoonful onto the center of each cooking section of the pizzelle maker. Close lid and allow to cook for 45-60 seconds or until lightly browned. Allow to cool on a wire rack.

Dust with powdered sugar, if desired.
