Starlight Mint Surprise Cookies Recipe

Ingredients
  • 3/4 cup margarine or butter softened
  • 1 cup Sugar
  • 1/2 cup firmly packed brown sugar
  • 2 Eggs
  • 2 tablespoons water
  • 1 teaspoon vanilla
  • 3 cups all-purpose flour
  • 1 teaspoon soda
  • 1/2 teaspoon Salt
  • 1 package solid chocolate mint candy wafers (Andes mint) (9 ounce package)
Directions
In large bowl combine margarine, sugar, brown sugar, eggs, water and vanilla; blend well. Lightly spoon flour into measuring cup; level off. By hand stir in flour, soda, and salt mix well. Chill at least 2 hours. Heat oven to 375 degrees. Grease cookie sheets. Enclose each wafer in about 1 scant tablespoon of dough. Place 2 inches apart on prepared cookie sheets. Top each with a walnut half. Bake at 375 for 10 to 12 minutes or until golden brown. Makes 48 cookies.
