  • 1 pound carrots
  • 1 sweet red pepper
  • 1/2 cup raisins or dried cranberries
  • 1/4 cup salted roasted sunflower seeds
  • 1/4 cup bottled vinaigrette dressing, or to taste
  • 2 tablespoons chopped parsley

  • Peel carrots and grate coarsely, or shred in a food processor.  Dice pepper or cut into matchsticks and add to carrots. Stir in raisins and sunflower seeds and toss with vinaigrette. Sprinkle with parsley and serve.
