Mexican Casserole Recipe

Ingredients
  • 1 pound ground beef or turkey
  • 1 onion (chopped) (small)
  • 1 can cream of mushroom soup
  • 1 can enchilada sauce (red or green)
  • 1 package Tostada chips
  • 1 package grated cheese (we like Mexican blend)
  • 1 8 x8 Pyrex or baking dish
Directions
Brown ground meat with chopped onion. Drain and wash meat to make more healthy. Set meat aside. Mix enchilada sauce and cream of mushroom soup in bowl. Crumble a handful of chips and layer on bottom of baking dish. Spread a layer of ground meat. Spread a layer of sauce/soup mixture over chips and meat. Sprinkle grated cheese over entire layer. Repeat layers until all ingredients are used. Cover with foil and bake at 350 degrees for 30 minutes until casserole is bubbling. Serve with salsa and enjoy!
