Madeira Rice Recipe

Ingredients
  • 3 cups rice
  • 1 1/2 cups chopped green onions
  • 2 tablespoons butter
  • 2 cups cooked ham, chopped
  • 1 cup pistachio nuts
  • 2 teaspoons tarragon
  • 1/2 cup butter, melted
  • 1/3 cup Madeira
  • Salt and pepper to taste
  • 1 cup chopped parsley
Directions
Cook rice. Sauté onions in 2 tablespoons butter. Add rice, ham, parsley, nuts, tarragon, salt and pepper. Add melted butter and Madeira. Mix gently. Bake in greased, covered casserole at 350° for 30 minutes.
