Reception Carrot Cake Recipe

Ingredients
  • 1 cup oil
  • 3 eggs, beaten
  • 1 cup crushed pineapple
  • 3 cups flour
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla
  • 1 cup raisins, chopped
  • 2 cups sugar
  • 2 cups shredded carrots
  • 1 teaspoon Salt
  • 1 teaspoon soda
  • 1 cup nuts, chopped
  • Frosting
  • 1 package cream cheese (8 ounce pkg.)
  • 1/4 cup butter
  • 2 teaspoons Vanilla
  • 1 box powdered sugar
  • Hot Caramel Sauce
  • 1 1/2 cups brown sugar
  • 2/3 cup evaporated milk
  • 2/3 cup light corn syrup
  • dash of salt
Directions
Mix all ingredients in order. Bake at 350° for 45 minutes in a cake pan (9x13). Allow to cool and frost with frosting or caramel sauce.
