Here’s an easy way to prepare your own crispy tortilla chips: Simply cut your favorite tortillas into wedges and deep-fry. Season them any way you like, and enjoy them with fresh homemade salsa. Delicious!

Servings: makes about 3 dozen
Ingredients
  • canola oil
  • 6 tortillas - 6 inch, any flavor you like, cut into wedges
  • salt or black sesame seeds
Container: large baking sheet, large skillet

  • Line baking sheet with paper towel.
  • Fill skillet with 3 inches of oil.
  • Heat oil over high heat until it registers 350° on candy thermometer.
  • Drop about 6 slices tortillas into oil and cook for 45 seconds or until chips are crisp and golden.
  • Flip once.
  • Remove with tongs or wire mesh strainer.
  • Transfer to lined baking sheet.
  • Salt generously or season with seeds.
  • Repeat with rest of wedges.
  • Serve with salsa.
