Butter Pecan Upside Down Cake Recipe

  • 1 cup pecans, chopped
  • 1 cup Coconut
  • 1 box butter cake mix
  • 1 stick butter, melted
  • 1 box powdered sugar
  • 1 package cream cheese, softened (8 oz pkg)
Spray 9x13 pan with Pam, then spread 1 cup of chopped pecans and 1 cup coconut over the bottom of the pan. Mix one Butter Cake mix as directed on the box. Pour batter over the coconut and pecans. Mix 1 stick melted butter, 1 box powdered sugar and 1 package of softened cream cheese. Spoon over unbaked cake batter. Bake at 350° for 45-50 minutes. Let set in pan for about 10 minutes and then turn out on a tray. Note: you can't test for doneness with this cake. the icing sinks to the bottom while baking and makes a gooey white ribbon throughout the cake.
