Prebake frozen pie shell with egg wash for 10 minutes.
Heat oven to 375. Saut onion and red pepper in oil. Whisk together eggs and half and half. Stir in cheese, nutmeg, parsley, salt, pepper and onion mixture. Place pie pan on a baking sheet to catch any drippings.
Pour egg mixture into prepared pie shell. Bake for 40 minutes or until set in center. Rest for 5 minutes longer before slicing and serving.
Note: You may add any other ingredients: cooked pieces of bacon, chopped ham, and mushrooms (they must be sauted ahead and placed on paper towel to remove excess moisture.) Extra ingredients will add extra volume to the quiche, so be careful how much you add.
