Ingredients
  • 1 1/2 cups flour
  • 1 tablespoon sugar
  • 2 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 2 eggs
  • 1 1/2 cups milk
  • 3 tablespoons butter, unsalted, melted
  • 2 apples, peeled, halved, cored
  • MAPLE HONEY:
  • 1/2 cup maple syrup
  • 1/2 cup honey
Directions
Sift flour, sugar, baking powder, salt and cinnamon in large mixing bowl.

In a separate bowl, beat eggs until frothy. Add milk to eggs and beat well. Combine milk mixture to flour mixture, stir in melted butter. Grate the apples into the batter and stir to combine.

Heat skillet over medium heat and swirl in some butter. When butter is hot but not yet brown, ladle 1/4 cup of the batter into pan for each pancake. Cook until bubbles form on top of pancake and bottoms turn golden brown, 2-3 minutes. Flip pancakes and cook until centers are done, about 2 minutes more. Serve pancakes with maple honey.

For Maple Honey, combine maple syrup and honey in a small serving pitcher. Gently stir until mixed and warm, reserve until use.
