Spinach Florentine Recipe

  • 1 pound fresh spinach or 10 ounce frozen spinach
  • 1 red onion, sliced (medium)
  • 1 tomato, chopped (medium)
  • 4 mushrooms, sliced (large)
  • 1 tablespoon butter
  • 1 teaspoon basil
  • 1 teaspoon oregano
  • 1/2 teaspoon black pepper
  • 1/2 cup ricotta cheese
Wash spinach and cut stems off. Melt butter in large saucepan. Add basil, oregano, and pepper. Add vegetables to pan and simmer over medium heat, stirring occasionally until spinach becomes mushy. Add ricotta cheese and stir. Cook approximately 10 minutes.
