Sprouted Lentil Waffles Recipe

Ingredients
  • 2/3 cup sprouted lentils
  • 1 cup water
  • 2 tablespoons oil
  • 1/2 teaspoon Salt
  • 1 1/4 cups rolled oats
Directions
To sprout lentils: sort and wash the lentils. Cover and soak overnight. Drain and rinse. Place in a colander. Cover with a towel and let stand at room temperature. Rinse 3 times a day until lentils sprout and grow an 1/8' "tail", about 2 days.

For waffles: Combine the sprouted lentils with the other ingredients in a blender. Blend on high speed until chopped fine and mixture is light and foamy, about 30 seconds. Leave in refrigerator overnight. Ladle on to a preheated waffle iron. Bake until crispy. Top with your favorite syrup or jam.
