Ingredients
  • 3 tablespoons oil
  • 1 package frozen hash browns, thawed (2 lb bag)
  • 1 onion, chopped (optional)
  • 1 green pepper, chopped (optional)
  • 1 cup ham, cubed
  • 10 eggs, beaten
  • 1 cup Cheddar cheese, shredded
  • salt and pepper, to taste

Heat oil in skillet.

Add hash browns, onions and green pepper, if desired. Cook until potatoes begin to brown.

Spray a 9x13 pan with vegetable oil spray. Spread potato mixture in bottom of pan. Top with ham. Pour eggs over all and season with salt and pepper. Sprinkle with shredded cheese.

Bake covered for 25 minutes at 375°.

Remove foil and bake 5 minutes longer.

NOTE: this can be prepared the day before and refrigerated until ready to bake.

"Everyone loved this on Sunday morning. I put the uncooked hashbrowns in the 9x13 pan and baked them for 20 minutes at 425 degrees F until they started to brown. Then I toppped them with the meat, eggs and cheese; lowered the temp and baked it. One less pan to clean!"
