Microwave Bran Muffins Recipe

  • 3 cups whole bran cereal
  • 1/2 cup shortening
  • 2 cups buttermilk
  • 2 Eggs, beaten
  • 2 1/2 cups Flour
  • 1 cup Sugar
  • 1 1/2 teaspoons baking powder
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon Salt
Combine cereal and 1 cup boiling water. Stir in shortening until melted. Add buttermilk and eggs. Mix well. Stir flour, sugar, baking powder, baking soda and salt. Add all at once to mixture. Stir til moistened. Store in fridge up to 4 weeks. Put 2 T. in each muffin paper. Microwave 6 muffins on high for 2 1/2 minutes. Makes 48 muffins.
