Ingredients
1 package yeast
2 tablespoons very warm water
pinch sugar
4 cups flour
2 tablespoons sugar
3/4 teaspoon salt
2 sticks margarine
1 cup warm milk
2 eggs (beaten)
Directions
Mix yeast, warm water, and sugar. In a separate bowl, mix flour, sugar and salt. Cut in dry ingredients with margarine until crumbly. Add warm milk, beaten eggs and dissolved yeast. Stir/toss with fork until all dry ingredients are moistened. Dough will be sticky and not smooth. Cover tightly and refrigerate overnight. Next day, divide dough in half. Dough must be kept cold when rolling out. Roll out on floured surface until even. Rectangle form approximately 12 by 18 inch. Spread 1 can of solo poppy seed or almond filling. If using other fruit fillings: cherry, apricot or raspberry, use about 3/4 can (blueberry is yummy also). Too much of the fruit fillings may make it hard to roll out and shape. Roll up from wide side jelly roll style and pinch to seal. Lay filled roll in circle shape on greased pan. Use kitchen shears to make cuts about 1/2 to 1 inch apart all the way around the roll. Shape dough by laying cut pieces slightly on sides overlapping each other. Cover with clean cloth and let rise until nearly double. Bake at 375° for about 20 minutes or until lightly browned. Drizzle with powdered sugar frosting. ** Optional, flavor with almond extract.
