RICE PUDDING Recipe

Ingredients
  • 3/4 cup white rice
  • 4 cups water
  • 2 cups whole milk
  • 1 cup sugar (1/2 for hot mixture and 1/2 for cold mixture)
  • 1 egg
  • 1 can evaporated milk (3/4 cup) (tall can)
  • 1/2 teaspoon Salt
  • 1 teaspoon vanilla
  • 1/2 cup raisins (optional)
Directions
Boil white rice & water in a pot for 20 minutes. When it comes to a boil, add whole milk. Boil 15 minutes longer. Then put in 1/2 cup sugar. Stir - leave on low fire.

COLD MIXTURE:

(in a separate bowl) beat one egg - add evaporated milk in with the egg. Add 1/2 cup sugar to the mixture and then add salt and vanilla.

Add cold ingredients into hot mixture. Stir. Mix raisins (optional) into the hot mixture. Boil again. Take off heat. Pour into big bowl. Will thicken as it stands. Refrigerate. Enjoy!
