Scottish Buttermilk Bread Recipe

Ingredients
  • 2 cups flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon cream of tartar
  • 1/4 teaspoon salt
  • 1 teaspoon sugar
  • 1 tablespoon butter (room temperature)
  • 3/4 cup buttermilk (room temperature)
Directions
Preheat oven to 375°. Mix dry ingredients and then mix butter in until it resembles rice or small peas. Add buttermilk. Mix thoroughly. If dough is too moist to handle without sticking, dust with additional flour. Pat into a round loaf about 8" across and flatten slightly. With a sharp knife cut an X about 1/2" deep in the top. Place on a baking sheet sprinkled with cornmeal or flour. Place on the middle shelf of the oven and bake for 35 to 40 minutes, or until the loaf is golden brown. Place on rack to cool before cutting for about 15 minutes or so.
