Pumpkin Roll 2 Recipe

Ingredients
  • 3 eggs
  • 1 cup sugar
  • 2/3 cup canned pumpkin
  • 3/4 cup self rising flour
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • FILLING:
  • 8 ounces cream cheese, softened
  • 4 tablespoons butter
  • 1 1/2 cups powder sugar
  • 1 teaspoon vanilla
Directions
Roll:

1. Grease cookie sheet and cover with wax paper.

2. Mix ingredients for the Roll in a bowl.

3. Pour mixture on cookie sheet and bake at 350 degrees for 15 minutes.

4. Turn out on a clean dishtowel sprinkled with powder sugar, remove wax paper, and roll up in towel.

5. Let cool.

Filling:

1. Mix all filling ingredients together in a small bowl.

2. Unroll the cooled pumpkin roll and spread filling, then roll back up without the towel.

3. Wrap in foil and refrigerate.
