Apricot and Golden Raisin Chicken Recipe

Colorful dish for a crisp autumn supper.
Directions
  • Preheat oven to 350°F.
  • Place chicken in baking dish, skin side up if using chicken with the skin on. Season with salt and pepper. Sprinkle ginger over chicken. Spread marmalade on top.
  • Bake, uncovered, for 30 minutes.
  • Remove from oven and pour juices* in dish, sprinkle chicken with apricots and raisins. Bake another 30 minutes, uncoved, basting frequently.
*Note: The pan sauce makes a wonderful fruit sauce to serve warm with chicken.

- 10 chicken breasts, thighs, legs, separated or combination of your choice
- 1 teaspoon ginger ground
- 18 ounces orange marmalade
- 1/2 cup apple juice
- 1/2 cup orange juice
- 7 ounces apricots dried, roughly chopped
- 1 cup golden raisins
