Chutney Curry Chicken Sandwich Recipe

Mango chutney adds great flavor to the yogurt curry sauce in these sandwiches.

  • 3/4 cup yogurt or sour cream
  • 3/4 cup chutney mango
  • 2 tablespoons lime juice
  • 2 tablespoons curry powder mild
  • 1/2 cup golden raisins
  • 3 chicken breasts boneless, grilled, sliced into bite size pieces
  • 2 green onions chopped
  • 1/2 cup cilantro leaves, chopped
  • 1 cup baby spinach leaves or favorite lettuce leaves
  • 6 sandwich rolls split
  • salt and pepper to taste
Container: food processor, medium mixing bowl

  • In food processor, pulse yogurt, chutney, lime juice and curry until blended but not completely smooth.
  • Scrape the mixture into medium bowl, add grilled chicken pieces, green onion and cilantro; toss well.
  • Season with salt and pepper.
  • Lay spinach leaves on rolls, spoon chicken salad to top and serve.
