Peanut Butter and Jelly Bars Recipe

Fun dessert for kids using some of their favorite ingredients.

Peanut Butter and Jelly Bars Recipe (+)

Directions

Grease 9" x 13" pan, then dust with flour. In large electric mixter bowl, cream butter and sugar on medium/high speed until light yellow; approximately 2 minutes. Turn mixer on low, add vanilla, eggs, peanut butter and mix until all ingredients are combined.
In medium bowl sift together flour, baking powder and salt. With mixer on low, slowly add flour mixture to peanut butter mixture. Mix just until combined.
Spread 2/3 of the dough into cake pan. Spread jam evenly over dough. Drop small mounds of remaining dough evenly over jam. Jam doesn't have to be completely coverd, it will even out during baking. Sprinkle with chopped peanuts and bake for 40-45 minutes, until golden brown.
Let cool and cut into squares.

-		2 sticks unsalted butter, room temperature, cut into squares
-		1 1/2 cups sugar
-		1 teaspoon vanilla
-		2 large eggs
-		2 cups smooth peanut butter
-		3 cups flour
-		1 teaspoon baking powder
-		1 1/2 teaspoons kosher salt
-		1 1/2 cups (18 oz.) raspberry or favorite flavor of jam
-		2/3 cup salted peanuts, coarsly chopped
