Grilled Caribbean Chicken Sandwich Recipe

  • 4 chicken breast, boneless, skinless
  • 2 1/2 lemon juice
  • 1 1/2 hot pepper sauce
  • 1 1/2 ginger, finely chopped
  • 1 1/2 soy sauce
  • 1 1/2 peanut oil
  • 2 galic, coarsley chopped
  • 1 thyme, dried
  • 3/4 black pepper
  • 3/4 allspice, ground
  • 1/2 salt
  • 4 hamburger buns
  • butter for toasting buns
Container: medium glass dish or large plastic resealable bag
  • Combine ingredients in blender and purée. Place chicken breasts in glass dish or in large plastic bag, pour puréed mixture over the chicken. Cover, refrigerate overnight.
  • Heat grill to medium heat. Remove chicken breasts from marinade and place on grill; discard marinade. Cook for 10-12 minutes, turn chicken over and grill the other side for another 10 minutes or until juices run clear.
  • Lightly butter buns and place on grill, butter side down for about 1 minute or until lightly toasted.
  • Garnish with your favorite vegetables and serve.
