Grilled Onions in Foil Recipe

This great side dish of grilled sweet onions combined with a terrific blend of tomatoes, olive oil, and rosemary is difficult to resist. A tasty accompaniment for roast beef or steak.

Ingredients
  • 10 ounces package of pearl onions, peeled
  • 2 tablespoons olive oil
  • 1 tablespoon fresh Rosemary, chopped
  • 1/4 cup dried tomatoes, hydrated in hot water for 5 minutes, drained, chopped
  • salt and pepper to taste
Container: 12" x 12" square of aluminum foil

  • Lay out foil, place peeled onions in center.
  • Sprinkle oil over all, then rosemary, then tomatoes, salt and pepper.
  • Fold foil into pouch and place on grill on medium heat for 10 minutes or until softened and carmelized.
  • Serve hot off the grill.
