Gingerbread Muffins Yummy and Healthy Recipe

Ingredients
  • 1 1/4 cups whole wheat flour
  • 1 teaspoon nutmeg
  • 3/4 teaspoon soda
  • 1/2 teaspoon cinnamon & ginger, each
  • 1/4 teaspoon salt
  • 1 egg
  • 1/4 cup oil (I use olive)
  • 1/3 cup molasses
  • 1/2 cup buttermilk (I use milk with 1 T. lemon juice added)
  • 1/3 cup chopped nuts (optional)
Directions
Bake 400 12 to 14 minutes Yield; 12 muffins.
