Ingredients
  • 16 ounces 1 package Italian flavor sausage
  • 3/4 cup baking mix
  • 2 cups shredded sharp cheddar or colby jack cheese
  • 1/4 cup finely chopped onion
  • 1/4 cup finely chopped celery
  • 1/2 cup peeled apple, finely chopped
  • 1 teaspoon pepper
  • 1 clove garlic, minced (optional)
Container: Large mixing bowl, baking sheet

  • Preheat oven to 375 degrees.
  • Combine all ingredients in mixing bowl, mix together, form into 1" balls. Place on ungreased baking sheet.
  • Bake for 20 minutes or until golden brown.
  • Remove from oven, cool 5 minutes. Transfer to serving dish.
  • Serve with cocktail forks or toothpicks.
  • Note: May be prepared ahead of time and frozen, uncooked. To bake from frozen: Thaw on baking sheet for 15 minutes, bake in preheated oven for 20-25 minutes.

"Use foil to line the baking sheet, because the cheese will glue the meatballs to the pan. These are very good meatballs. Don't be Concerned about using cheddar, it works very well with the combination of ingredients. If you're eating Low carb, 1/4 of a medium apple does the trick."
