Ingredients
1/2 cup dried apricots
1/2 cup chopped dates
1/4 teaspoon soda
1 1/2 cups brown sugar
1/2 cup chopped nuts
3 cups sifted all purpose flour
1/2 teaspoon baking powder
1 egg
1 1/2 cups milk
Directions
Soak apricots in warm water to cover for about 15 minutes, not any longer or they will get soggy. Drain and cut in pieces, add dates and nuts. Sift flour, salt, baking powder, soda and brown sugar. Add chopped fruit and nuts. Beat egg, stir in milk and melted shortening. Add to dry ingredients and beat well. Turn into a well greased loaf pan and let stand 15 minutes. Bake in slow oven 350° for one hour or until done. Cool on rack. Spread cream cheese on slices and serve as a sandwich with beverage.
