Gingerbread Pumpkin Bread Recipe

A spiced up version of a classic favorite. Perfect in the fall but great any time of year. This pumpkin bread is moist and soft and makes 2 loaves.

Ingredients
  • 2 1/2 cups sugar
  • 1 cup vegetable oil
  • 4 eggs
  • 2/3 cup water
  • 1 can pumpkin puree (15 ounce can)
  • 2 teaspoons ground ginger
  • 1 teaspoon allspice
  • 1 teaspoon cinnamon
  • 1 teaspoon ground cloves
  • 3 1/2 cups flour
  • 2 teaspoons baking soda
  • 1 1/2 teaspoons salt
  • 1/2 tablespoon baking powder

Preheat oven to 350 degrees F. Grease 2 bread pans.

In a large mixing, combine sugar, oil and eggs; beat until smooth.

Add water and beat until well blended.

Stir in pumpkin, ginger, allspice, cinnamon and cloves.

In medium bowl, combine flour, soda, salt and baking powder. Add dry ingredients to pumpkin mixture and blend just until all ingredients are mixed. Divide batter evenly between prepared pans.

Bake in preheated oven until toothpick comes out clean, about 50-60 minutes.
