Moist Banana Bread Recipe

A creamy banana bread that freezes well. Kids and adults alike will love this bread, topped with butter or not. Stir in some walnuts if you prefer.

Ingredients
  • 1/3 cup shortening
  • 1/2 cup sugar
  • 2 eggs
  • 1 3/4 cups flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 cups banana, mashed (approximately 3 bananas)

Preheat oven to 350° F.

Cream shortening and sugar, add eggs and beat well.

Sift dry ingredients and add to creamy mixture. At this point, slowly add bananas.

Pour into well greased 9x5x3 loaf pan. Bake for 35-45 minutes. Check center with toothpick. Do not overcook.
