RAISIN TEA BREAD Recipe

Ingredients
  • 2 1/2 cups Flour
  • 2 teaspoons baking powder
  • Pinch of salt
  • 1 cup Sugar
  • 2 eggs, lightly beaten
  • 3/4 cup Milk
  • 1/2 cup olive oil
  • 1/2 cup raisins
  • Grated zest of 1 lemon
Directions
Preheat oven to 350°. In a medium mixing bowl, combine flour, baking powder, salt and sugar. Add beaten eggs, milk and olive oil. Toss raisins with a little flour. Add to batter along with grated lemon zest. Stir until well combined. Grease 2 5x9" loaf pans. Bake in oven for about 45 minutes. Makes 2 loaves.
