A delicious solution - a moist cake to serve with coffee or for dessert.
Oatmeal Streusel Cake Recipe (+)
Directions
Preheat oven to 350ºF. Spray 9"x13" pan lightly with non-stick cooking spray.
Place oatmeal in a medium sized bowl. Pour boiling water over oatmeal and set aside for 20 minutes.
In a separate large bowl, beat butter and sugars together with an electric mixer. Add eggs and vanilla. Continue beating until well combined. Add flour, salt, soda and cinnamon. Mix all ingredients until well combined. Add oatmeal mixture and raisins, mix well.
Pour into prepared pan. Combine topping ingredients and sprinkle over top of cake.
Bake 35-40 minutes or until a cake tester, or toothpick, inserted in center comes out clean.

1/2 cup raisins (optional)
OPTIONAL TOPPING:
-
1/2 cup brown sugar, packed

1 teaspoon cinnamon
-
1/4 teaspoon nutmeg
-
1/4 cup butter or margarine
-
1/2 cup all purpose flour
-
1/2 cup nuts, chopped
