  • 2 cups parsley, packed tight
  • 6 cloves garlic, or more if you wish
  • 1 teaspoon salt
  • 2/3 cup olive oil
  • 1/3 cup lemon juice
  • 2 tablespoons water

  • In a food processor (or by hand), chop the parsley very fine. Add the other ingredients and pulse to form a thick sauce.
  • Spread some of the sauce on meat before grilling or roasting. Serve the rest with the cooked meat so that each diner may add the amount wanted.
