Shrimp Open Faced Sandwiches Recipe

  • 1 can deveined broken shrimp
  • 3 scallions, white and green, thinly sliced
  • 3 tablespoons sour cream
  • 4 tablespoons mayo
  • 6 tablespoons grated Parmesan cheese
  • White pepper to taste
  • 14 slices rye bread
  • 14 tiny sprigs parsley
  • 14 whole cooked shrimp
Drain shrimp. Combine scallions, canned shrimp, sour cream, mayo, cheese and a dash of pepper. Mix by hand until almost smooth. Spread each slice of bread with about 1 tbsp of the shrimp mixture. Top with 1 shrimp and a sprig of parsley. Serve cold.
