Mix sugar and extract in 1/2 gallon lukewarm water in a 1 gallon glass bottle. Shake to dissolve sugar.
Add yeast and shake lightly to mix.
Fill bottle to within 1 inch from top with lukewarm water and cap.
Keep at room temperature for 5 hours to overnight (8 hours). Put in a safe place away from children. If the bottle makes it though the first 5-8 hours, place in refrigerator and cool for 12-18 hours before tasting.
