Salmon Croquette Recipe

  • 1 can pink salmon
  • 1/4 green bell pepper, chopped
  • 1 egg
  • 1 cup bread crumbs, divided
  • salt and pepper to taste
  • 1/4 onion, chopped
Remove bones from can of salmon and place in medium mixing bowl. Add finely onion and pepper, add1/4 C bread crumbs. Mix thoroughly. Take remaining bread crumbs and place in a separate bowl. Take the salmon mixture and make 8 small patties. Meanwhile place 1 inch of oil in a medium nonstick skillet and heat to medium high. Cover patties with breadcrumbs and place 2-3 at a time in the oil. Turn after 2-3 minutes to brown on each side.

Goes well with biscuits.
