Cilantro Salad Dressing Recipe

  • 1 bunch cilantro (leaves only)
  • 3/4 cup extra virgin olive oil
  • 3/4 cup light mayonnaise
  • 2 jalapeño peppers, seeded and diced*
  • 1/2 cup feta cheese (any flavor)
  • 1 clove garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
Container: food processor or blender

  • In a food processor or blender, combine all ingredients. Cover and pulse until smooth, or if preferred, coarsely chopped.
  • Refrigerate a minimum of one hour.
  • Keeps approximately 5 days in the refrigerator.

              *Or 4 ounces of green chilies, diced.
