  • 2 eggs
  • 1 tablespoon water
  • 1/3 cup dry bread crumbs
  • 1/3 cup instant potato flakes
  • 1/3 cup grated Parmesan cheese
  • 1 teaspoon seasoned salt
  • 6 filets of walleye fish

  • Preheat the oven to 450° F. Grease the bottom of a baking sheet.
  • In a medium-size bowl, beat the eggs and water until smooth.
  • On a large plate, combine the bread crumbs, potato flakes, parmesan cheese, and seasoned salt; stir to combine evenly.
  • Dip the fish filets into the beaten eggs and then dredge in the crumb mixture to coat thoroughly on both sides. Place the coated filet on the prepared baking sheet.
  • Bake in the preheated oven for 15 to 20 minutes or until fish is flaky.
  • Serve while hot.

"We go fishing several times through the summer and love to catch walleye but my wife hates the mess of frying it. I found this recipe and she tried it this last weekend. We really liked the crispy coating and flaky fish we got without frying it in oil. It was easy to make and we didn't have that greasy mess afterwards."
