Simple Egg Salad Sandwiches Recipe

An easy to make sandwich that is perfect for a quick weeknight meal. Kids love egg salad for a change of pace from hamburgers, barbecues and hot dogs.

  • 12 eggs, hard boiled
  • 3/4 cup salad dressing (not mayonnaise)
  • 1 1/2 tablespoons sugar
  • Salt and pepper to taste (see note below)

  • Peel eggs and slice with an egg slicer; place in a bowl or on a plate.
  • Add the remaining ingredients and mix everything together with a fork, smashing the eggs a little more as you are mixing.
  • Chill and then spread on white, rye, wheat, or your family's favorite bread.
Note: To salt and pepper to taste, I sprinkle the eggs as if I am salt and peppering 12 individual fried eggs so that I don't over do it. You can always taste test and add more.
