Eggs with Tator Tot Quiches Recipe

Individual egg quiches with a potato crust. Perfect for company. You can add any ingredients you want to make these bite sized breakfasts.

  • 8 eggs
  • 1/4 cup milk
  • 6 slices bacon, cooked, crumbled
  • 6 slices ham, cooked, diced
  • 1 cup shredded cheese

Preheat oven to 400 degrees. Grease muffin tins very well.

Thaw tator tots in the microwave for 3-4 minutes.

Place 3 tator tots in each muffin well. Press with a glass to flatten. Bake your tator tots for 10 minutes.

Lower oven temperature to 350 degrees.

In a medium bowl, combine egg and milk. Whisk.

Top each tator with bacon and ham, or any other toppings you prefer. Top with egg mixture and then cheese.

Bake for 18-20 minutes.

To remove from the pan, run a butter knife around the edge of each one to loosen it from the sides, and use a spoon to pop them out.

"Tasted great. Be sure to salt and pepper the egg mixture. I think I would have loved them with hashbrowns instead of the tator tots since I think they have a frozen flavor you can't quite get rid of."
