Early Rise Breakfast Bake Recipe

A low carb breakfast bake that you won't be missing anything! Full of flavor and is delicious. Perfect for company as it sits in the refrigerator overnight and is ready to put in the oven. This can be frozen, too.

Ingredients
  • 12 ounces bacon
  • 1 pound pork sausage
  • 1/2 cup onion, diced
  • 1/2 cup green pepper, diced
  • 12 eggs
  • 1 cup heavy cream
  • 1 can mushrooms, drained (4 oz can)
  • salt & pepper, to taste
  • 8 ounces shredded Cheddar cheese

Brown the bacon, sausage, onions and peppers; drain.

In a large bowl, beat the eggs. Add cream and salt and pepper, to taste.

In a greased 9x13 inch pan, spread the meat mixture. Pour the egg mixture evenly over the top. Top with cheddar cheese. Cover and chill overnight.

Bake at 350 degrees F for 50-60 minutes, until golden brown and a knife inserted in the middle comes out clean.

NOTE: If not chilled, bake only 40-45 minutes.

"I had my sisters and mom over at Easter and served this. It was delicious! I made one without onions and with Swiss cheese since I have a sister who doesn't eat onions. It was a toss up on which one was better!"
