Macaroni and Cheese 60 Recipe

  • 6 cups water
  • 1 1/2 teaspoons salt
  • 2 cups elbow macaroni
  • 3 cups grated Cheddar cheese
  • 2 tablespoons butter
  • 2 tablespoons flour
  • 2 cups heavy cream
  • salt and pepper to taste
Bring to a rolling boil in a medium saucepan: 6 C of water and 1 1/2 tsp of salt. Add and cook until just tender: 2 C. of elbow macaroni. Drain and remove to a large bowl. Have ready:2 1/2 C. of grated cheddar cheese. Melt in a large saucepan over medium-low heat: 2 T. of butter. Whisk in and cook, whisking constantly for 3 minutes: 2 tsp. of flour. Gradually whisk in: 2 C.. of heavy cream. Simmer gently, stirring often, for 15 minutes. Remove from heat and stir in 2 1/2 C of the cheese until melted. Season with the salt and pepper to taste. Stir in the cooked macaroni. Pour into greased 9x13 baking dish. Top with the leftover cheese. Bake at 350 degrees until the cheese is lightly browned, about 30 minutes. Serves 6-8.
