Pumpkin Bars with Pecans Recipe

Ingredients
  • 2 cups all-purpose flour
  • 2 teaspoons ground cinnamon
  • 1 1/2 teaspoons salt
  • 1 can pumpkin (15 ounce can)
  • 1 cup oil
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 4 eggs
  • 1 2/3 cups sugar
  • 3/4 cup pecans, chopped (optional)
  • FROSTING:
  • 1 package cream cheese, softened (3 ounce pkg)
  • 1/4 cup margarine, softened
  • 1 teaspoon vanilla
  • 2 cups powdered sugar
Container: 9x13-inch pan
Directions
In medium bowl, combine flour, baking powder, baking soda, cinnamon and salt. Set aside.

In large bowl beat eggs, pumpkin, sugar and oil. Add flour mixture, beat until blended. If desired add nuts.

Spread batter into an ungreased 9x13-inch pan.

Bake at 350 for 25-30 minutes or until knife comes out clean. Cool on wire rack.

For frosting, mix together cream cheese, margarine and vanilla. Add powdered sugar until desired consistency.
