Butternut Squash with Baby Spinach Recipe

Ingredients
  • 1 package cubed butternut squash
  • 1 red onion (large)
  • 3 tablespoons olive oil
  • 1 package baby spinach
  • 3/4 cup dried Cranberries
  • Salt and pepper to taste
Directions
Heat oven to 350°. Combine cubed butternut squash and chopped red onion in a large shallow pan. Drizzle with oil.

Season with salt and pepper. Roast for 55 minutes (mix in roasting pan periodically) until squash is tender and lightly brown.

Remove from oven, toss with baby spinach and dried cranberries. Serve warm or at room temperature.
