Plum & Ginger Jam Recipe

  • 4 1/2 cups pitted chopped plums (any kind - we have an Italian plum tree)
  • 7 1/2 cups sugar
  • 1 pouch liquid pectin (3 ounce )
  • 1 tablespoon lemon juice
  • 1/2 cup peeled, finely chopped fresh ginger (freeze your fresh ginger, then peel with the edge of a spoon and grate on your cheese grater)
Combine all ingredients except pectin in a large, heavy pot. Stir. Bring mixture to a rolling boil over high heat, stirring constantly. Continue stirring; boil exactly one minute. Remove from heat, stir in pectin. Skim if desired. Ladle into clean, hot jars to within 1/4" of top. Wipe rim of jar with clean cloth. Attach lids per manufacturer's directions. Process in boiling water bath for 10 minutes (pints).
