Frank's Chopped Salad Recipe

The best part of this salad is how versatile it is. You can go with the said ingredients or use what you have on hand. The more seasonal vegetables you use, the better it is. Great served with crusty bread for a light lunch.

  • 1 carrot, peeled, finely chopped
  • 1 cubanelle pepper, finely chopped
  • 1 tomato, finely chopped
  • 1/2 vidalia onion, finely chopped
  • 1 cucumber, peeled, finely chopped
  • 1 red pepper, seeded, finely chopped
  • 1 stalk celery, finely chopped
  • 1/2 jar marinated artichoke hearts, finely chopped (optional)
  • 1/2 cup crumbled feta cheese
  • freshly ground pepper, to taste
  • 6 cups mixed salad greens, shredded or chopped (optional)
  • 1/4 cup Italian dressing

Place all vegetables except salad greens in a large bowl.

Add dressing and mix gently.

Add in feta cheese and mix.

Serve vegetable mixture over shredded salad greens, if desired and add pepper to taste.
