Basil Pasta and Ham Salad (Diabetic) Recipe

  • Tomato Basil Dressing
  • 1 cup fresh tomatoes, chopped
  • 1/4 cup fresh basil, chopped
  • 2 tablespoons green onions, chopped
  • 2 tablespoons olive or vegetable oil
  • 2 tablespoons Lemon Juice
  • 1 clove garlic, minced
  • 1/2 teaspoon sugar
  • 1/4 teaspoon salt-free seasoning blend
  • 1/4 teaspoon pepper
  • 2 1/2 cups uncooked spiral pasta
  • 1 cup fully cooked low-sodium ham, cubed
  • 1 can sliced ripe olives, drained (2 1/2 ounce can)
  • 1/3 cup fresh basil, chopped
In a small bowl, combine the dressing ingredients. Refrigerate for at least 15 minutes. Cook pasta according to pkg. directions; drain and rinse with cold water. Place in a large bowl. Add ham, olives and basil; toss. Add dressing and toss to coat.
